||Broiled Scallops With Vermouth Sauce
Broiled scallops can be made in a wide variety of ways: raw or crusted in bread crumbs, ground pepper or parmesan, and topped with
honey-lime marinade, lemon-parsley sauce, wrapped in bacon, wrapped in Italian prosciutto, etc. Here is a simple and quick,
but elegant and very tasty recipe with a sweet vermouth sauce. It makes a great snack or starter, which we have been making
for many years for our friends or just for ourselves.
- 1 1/2 lb scallops
- 1/2 cup dry vermouth
- 1/2 cup olive oil
- 1/2 tsp finely chopped garlic
- 1/2 tsp salt
- 2 tsp minced parsley
- Marinate the scallops in the vermouth mixed with the remaining ingredients several hours in the refrigerator.
- Preheat the broiler. When ready to serve, place the scallops and the marinade in a shallow pan, place in the broiler
about 2 inches from the source of heat and broil 5 to 6 minutes, turning once.
