- 1 ripe cantaloupe, sliced in chunks
- 6 slices prosciutto crudo, julienned
- 1 head romaine
- Vinaigrette of 1/2 olive oil, 1/2 canola oil, red wine vinegar, salt and pepper
- Shaved parmesan cheese, optional
- Toss together, garnish with shaved parmesan and serve in a large bowl.
